Avocados have a lot of calories, but they are very healthy and tasty too.

Serves 1 Preparation time: 5 minutes

1 medium ripe avocado (250 cals)

6 cherry tomatoes, cut into quarters (14 cals)

100g (3½oz) cucumber (5cm/2in piece), peeled and cut into small cubes (10 cals)

2 tsp good-quality balsamic vinegar (10 cals)

salt and freshly ground black pepper

• Prepare the avocado by cutting it in half and removing the stone (pit). Mix the tomatoes, cucumber and vinegar together in a small bowl, then season with salt and pepper and spoon over the avocados. Serve immediately.
